My favourite meal of the day! Breakfast was something I never ate because I felt like I ‘just didn’t have the time’. These recipes are ones I actually use – with real ingredients easily found in your fridge or pantry at home. Make the morning a time to prepare for the day ahead – which includes a healthy meal. Vegie & Eggs Kick-Off
2 Free range eggs
Salt & Pepper to taste
1tblspn Extra Virgin Olive Oil
2 Brussel Sprouts
75g Corn kernels (Tinned or frozen)
Method: Whisk eggs, cream, salt and pepper in a bowl to make up your scrambled eggs. Then steam all the vegetables in a steamer on the stove or in the microwave. Just before the vegetables are done put the oil in a separate pan to heat up. Once nice and hot put your egg mix and stir around for a minute or two. Put all the elements in a bowl or on a plate to eat.
Tips: This doesn’t take long at all and once you get over having vegetables for breakfast, you’ll be able to enjoy this super healthy start to the day. Begin cooking and get ready while the vegies are steaming – then you’re done!
Variations: Cook any type of eggs you’d like, and steam other vegies too – cabbage works well, as well as asparagus.
